We want to have an all vegan menu at our reception, but mom thinks it’s selfish.Why should  we compromise our beliefs?

Don’t compromise you beliefs, but if you want to satisfy your guests (who presumably aren’t vegans), it would be considerate to tome down on the tofu for the wedding meal. No need to roast a pig or barbecue a lamb, but do serve a variety of meatless foods that non-vegans can relate to such as hearty pasta dishes and grilled vegetable skewers.
